  • 1 Cup Sugar
  • 1 Cup Brown Sugar
  • 2 Eggs
  • 1 teaspoon Vanilla Extract
  • 1 Cup Peanut Butter

Old Fashioned Peanut Butter Cookies are simply a classic cookie recipe that just hits the spot. Sweet and savory they’re a perfect anytime treat. This recipe couldn’t be any easier and is basically foolproof. While it makes a traditional, basic cookie, it could be a great base for all sorts of imaginative and tasty creations!

Making the cookies is simple. This recipe is a great one to practice basic cookie making techniques. Before proceeding, make sure your butter and eggs are at room temperature! This is an important part of the process and can’t be skipped. If you’re ready to get baking and your butter and eggs are still cold, you can put them in a bowl of warm (not hot!) water for about 10 minutes and that should help them reach room temp.

While delicious, these cookies are pretty traditional with not a lot of pizzazz. However – I think they’re a great canvas for all sorts of delicious ideas. You could dip them in melted chocolate and let set for a chocolate and peanut butter treat. You could add all sorts of different types of mix-ins: peanuts, chocolate chips, etc. And they would also make GREAT cookies for ice cream sandwiches. There are a lot of fun directions you could go in!

Steps:

  • Preheat Oven to 350º 
  • Sift Dry Ingredients 

    In a large bowl, sift together the All Purpose Flour, Baking Powder, Baking Soda and Salt. Set aside.

  • Cream Butter and Sugar 

    In a medium bowl or the bowl of a stand mixer, combine the butter (or margarine) and the sugar and brown sugar. Cream together by starting slow with the paddle attachment on a stand mixer or by using a hand mixer. After most of the sugar is incorporated into the butter, increase the speed to medium and keep mixing until the mixture is light and fluffy - about 2-3 minutes.

  • Add Eggs and Vanilla 

    Add the first egg to the butter and sugar mixture and mix on medium to combine, about 30 seconds. Next, add the second egg and the vanilla extract. Mix again to combine, about 30 seconds.

  • Add Peanut Butter 

    Add the peanut butter to the dough and mix to combine. About a minute on medium.

  • Add Dry Ingredients 

    Add the dry ingredients from step 2. Add about a half cup of the dry ingredients at a time and then mixing on low between each addition for about 30 seconds or until the dry ingredients are just incorporated. Repeat this until all the dry ingredients are incorporated into the dough.

  • Scoop Out Cookies 

    Scoop out the dough into 1" balls or using a cookie scoop. Leave about two inches or so between cookies and gently press down slightly.

  • Bake for 10-12 Minutes 

    Bake in the preheated over for about 10-12 minutes. Allow to cool on the tray for another 5 minutes and then move to a wire rack to cool completely. Store in an airtight container or freeze.
