These Pecan Pie Bars are a real treat and they are super easy to make. Have a craving for pecan pie but don’t want to go through the hassle of making the pie crust and the filling? This recipe is for you. And, because it fills up an entire 13″ x 9″ baking tray, it makes quite a bit more than your average pie. You probably already have all of the ingredients in your pantry, so there’s really nothing stopping you from trying this one!
About the Crust
The hardest part of this recipe is definitely making the crust – just like it is with making a pie. But, because of the way this crust is form, it’s much less finicky. As long as you get the dough blended decently, all you have to do is press it into the pan and you’re good to go. Much easier than rolling out a perfect circle, moving it into a dish, crimping the edges, etc. A hand held pastry blender really work great for this, but you could use a food processor with short pulses. Of course, two forks or even your fingers work fine in a pinch.
Finish it Off
For the topping, it’s best to keep it pretty traditional to get that pecan pie flavor. While Grandma’s recipe didn’t call for it, I did add a bit of vanilla extract and a pinch of sugar, just to heighten the flavors. If you are making these for adults, a splash a bourbon could be really good, too. The bars are great on their own, but if you served them with a big spoon of whipped cream or a scoop of ice cream, I don’t think anyone would be mad.
