  • 18 ounces (or so) Pre-Made Refrigerated Sugar Cookie Dough
  • 14 ounce can Sweetened Condensed Milk
  • 1 Cup Crunchy Peanut Butter
  • 1 Teaspoon Vanilla Extract
  • 3 Egg Yolks
  • 12 Ounce Package Chocolate Chips

A layer of store bought sugar cookies creates the crust that holds the chewy peanut butter layer and is then topped off with the easiest chocolate topping you'll ever make!

Grandma Jackie loved the combination of chocolate and peanut butter so I wasn’t shocked to find this recipe for Chewy Chocolate Peanut Butter Bars in her recipe box. However, I don’t remember these at all! I figured they looked easy enough and with all the flavors involved, it was bound to be good. And indeed, it exceeded expectations. This recipe is a breeze to whip up, and the resulting bars are a symphony of textures that perfectly complement the timeless combination of chocolate and peanut butter.

Like many vintage recipes, I encountered a slight hiccup in sourcing all the exact ingredients. Despite my efforts, I couldn’t locate an 18 oz. package of refrigerated sugar cookie dough; everything I found was 16.5 oz. Nevertheless, I forged ahead with what I had, and the bars turned out just fine. Thankfully, the rest of the ingredients were readily available, likely already residing in your pantry.

Steps:

  • Preheat Oven to 350º 
  • Prep Pan 

    Prepare a 13" x 9" baking pan by spraying it with a light coating of cooking spray.

  • Press Cookie Dough into Pan 

    Cut the cookie dough into chunks (or tear off by hand) and put at the bottom of the baking pan in an even layer. Press the cookie dough flat so you have one, even layer that covers the entire bottom of the pan.

  • First Bake 

    Bake the cookie dough in the preheated oven for 10 minutes.

  • Mix Next Layer 

    While the cookie dough layer is baking, make the next layer. Separate the yolks from three eggs and place them in a medium sized bowl. To that bowl with the egg yolks, add the milk, peanut butter, and vanilla. Mix with a spatula until smooth and fully combined.

  • Add Peanut Butter Mix 

    When the cookie layer is finished with it's 10 minute bake, take it out of the oven and spread the peanut butter mixture on top. Smooth it over the entire cookie layer and place it back in the oven.

  • Bake for 20-25 Minutes.

  • Add Chocolate Chips 

    After the second bake, take it out of the oven and immediately sprinkle the entire bag of chocolate chips evenly on top. Allow to sit without disturbing for about 3 minutes.

  • Smooth Chocolate and Cool 

    After three minutes, lightly smooth the chocolate evenly over the entire bake. Allow to cool for at least 10 more minutes before slicing and serving.
