Ingredients

  • 1, 9 ounce can Crushed Pineapple
  • 1/2 Cup Water
  • 1 package Lime Jello
  • 1 Cup Mayonaise
  • 1 Cup Cottage Cheese
  • 2 teaspoons Horseradish

A very family-specific recipe that is not for everyone.

Easy

Lots of flavors of lime, pineapple, horseradish and cottage cheese. Yeah. A family "classic" that is loved by a few.

Lime Cottage Cheese Salad Ingredients

This Lime Cottage Cheese Salad is truly a unique experience and one you won’t soon forget. No matter how hard you try. Loved by some, this salad is definitely a recipe that is, at best, controversial. It’s really quite simple to make and you could definitely call it a summer recipe. If you like lime jello, pineapple and cottage cheese, there’s a chance (no matter how slim) that you’d like them all mixed up together.

The trick to this recipe (other than avoiding it altogether) is to make it early enough that it has time to set in the fridge. At least four hours but preferably overnight. Another trick for the recipe is to make it for a pot luck or other large gathering. By doing that, there’s less of it you have to eat and the group that tries it will likely ask you to bring plates or cutlery for the next event. How easy is that?

Lime Cottage Cheese Salad Recipe

Steps:

  • Mentally prepare yourself for what you're about to make. 
  • Combine the first three ingredients and heat. 

    Add the crushed pineapple, water and lime jello in a stock pot. Stir to combine and heat over medium heat until very hot - almost to boiling. Stir frequently while heating.

  • Remove from heat and allow to cool slightly. 

    Once the mixture is very hot, remove from the heat and allow to cool slightly. About five minutes.

  • Add remaining ingredients. 

    Next add the remaining ingredients: mayonnaise, cottage cheese, horseradish and stir well to combine.

  • Pour into 13x9 and allow to set. 

    Now pour the mixture into a 13x9 pan, cover and place in the fridge to chill.
