These Chocolate Cherry Bars are almost more of a cake than they are bars and they’re about the easiest thing you could make. Almost a “dump cake” in it’s ease. The frosting does require a bit of work and finesse comparatively, but’s its also pretty quick and easy. Plus, the end result is a silky and fudgy frosting that could be used for many different desserts. The combination of bright cherries and rich chocolate is really the star here. If you like that combo – you will certainly LOVE these bars – err, cake.
To make the bar/cake portion, you pretty much just dump all the ingredients into a big bowl and stir. I would stir by hand, just so the cake doesn’t get overworked, but the majority of the ingredients are coming from a box, so you really can’t go wrong. The trick to the fudge, is really just keep stirring. Get the sugar, milk and butter into a sauce pan. Use one that is quite a bit bigger than you think you need. Get it over medium heat and, with a whisk, just keep stirring until it comes to a rolling boil and let it stay there for about a minute. Then dump in the chocolate chips. Keep stirring the whole time and you’re good.
This is a great recipe to make for first time bakers or those early in their baking journey. And the flavors are just perfect as-is. I don’t that adding anything or swapping any ingredients would help all that much. Don’t mess with perfection!
