  • 1 Box White Cake Mix
  • 4 Tablespoons (divided) Créme de Menthe
  • 1 1/2 Cup Heavy Whipping Cream
  • 1 Jar Hershey Fudge Topping
  • 2 Tablespoons Corn Starch
  • 3 Tablespoons Baker's Cocoa
  • 1 Cup Sugar
  • 1/4 teaspoon Salt
  • 1 Cup Cold Water
  • 1/2 Teaspoon Butter
  • 1 Teaspoon Vanilla Extract

Crème de Menthe Cake

A boozy cake that tastes like a Thin Mint.

This cake comes together so easily, but the flavor is so unique people will definitely be impressed!

This Crème de Menthe Cake is really unique! It’s fresh, minty flavor makes it perfect for spring or summer as temps are heating up. It can really be a simple cake if you used all prepackaged ingredients. I chose to make the hot fudge and whipped cream from scratch though and it didn’t add a whole lot of extra work – but it sure added a lot of flavor!

The core of the cake is really just a white cake mix that you add Créme de Menthe to and then you add hot fudge and whipped cream that’s also got Créme de Menthe in it. The booze cooks out of the cake, but the minty flavor remains. For the whipped cream though – the alcohol remains, but it is a pretty small amount. Mostly just for taste. Not much different than using vanilla extract.

The Créme de Menthe Cake recipe calls for it to be topped with Hershey’s Hot Fudge Topping – and I’m sure that would be great. But I decided to top the cake with my Grandma Phyllis’ homemade hot fudge! It’s a pretty easy recipe but, oh boy, is it good! It’s a great one to make and have on ice cream, too. You basically add all the dry ingredients for it in a medium pot and whisk together. Then pour in the water and stir over medium heat until it gets thick! Add butter and vanilla and you’re set to go. Be sure to let it cool though before adding to your cake.

Additionally, the recipe from Grandma Jackie’s recipe box calls for the final topping to be a large tub of Cool Whip that you mix 2 teaspoons of Créme de Menthe into. I much prefer homepage whipped cream so I just took 1 1/2 Cups of Heavy Whipping Cream and whipped it with my stand mixer and added some sugar and about a tablespoon of Créme de Menthe. It was so good!

Steps:

  • Preheat Oven to 350º 
  • Prep Your Pan 

    Spray a 13x9 baking dish with cooking spray or baking spray.

  • Make the Cake Batter 

    Empty the contents of the cake mix box into a large mixing bowl. Follow the instructions on the box and add two eggs and a half cup of water. Mix well to combine either by hand with a whisk or with a handheld electric mix. Do not over mix. Then, add 2 Tablespoons of Créme de Menthe to the batter and mix until incorporated.

  • Pour Batter into Baking Dish

  • Bake According to Cake Mix Directions 

    Bake the cake according to the instructions on the cake mix. Allow to cool completely before proceeding.

  • Make Hot Fudge 

    (Skip this step if you're using the Hershey's Hot Fudge Topping) Combine the dry ingredients for the hot fudge in a medium sized sauce pan (2T Corn Starch, 3T Baking Cocoa; 1 Cup Sugar, 1/4 tsp salt). Add 1 Cup of water and stir to make sure the dry ingredients are no longer dry. Cook over medium heat until it becomes thick. Add the 1/4 tsp butter and mix until it's melted and incorporated. Remove from heat and add 1 tsp vanilla extract. Allow to cool completely.

  • Top with Fudge 

    Now, you can top the cooled cake with your jar of Hershey's Hot Fudge topping or the homemade fudge from step 6. When both the cake and the fudge are cooled, pour the fudge on the cake and cover completely.

  • Make the Whipped Creme 

    In a cold, metal bowl add 1 1/2 Cups Heavy Whipping Cream and whip with a handheld mixer or a stand mixer. Start slow and gradually increase the speed until the cream starts to become thick. Then add the remaining 2 Tablespoons of sugar and remaing 1 Tablespoon of Créme de Menthe. Continue to mix until the whip cream is thickened.
