This Crème de Menthe Cake is really unique! It’s fresh, minty flavor makes it perfect for spring or summer as temps are heating up. It can really be a simple cake if you used all prepackaged ingredients. I chose to make the hot fudge and whipped cream from scratch though and it didn’t add a whole lot of extra work – but it sure added a lot of flavor!
The core of the cake is really just a white cake mix that you add Créme de Menthe to and then you add hot fudge and whipped cream that’s also got Créme de Menthe in it. The booze cooks out of the cake, but the minty flavor remains. For the whipped cream though – the alcohol remains, but it is a pretty small amount. Mostly just for taste. Not much different than using vanilla extract.
The Créme de Menthe Cake recipe calls for it to be topped with Hershey’s Hot Fudge Topping – and I’m sure that would be great. But I decided to top the cake with my Grandma Phyllis’ homemade hot fudge! It’s a pretty easy recipe but, oh boy, is it good! It’s a great one to make and have on ice cream, too. You basically add all the dry ingredients for it in a medium pot and whisk together. Then pour in the water and stir over medium heat until it gets thick! Add butter and vanilla and you’re set to go. Be sure to let it cool though before adding to your cake.
Additionally, the recipe from Grandma Jackie’s recipe box calls for the final topping to be a large tub of Cool Whip that you mix 2 teaspoons of Créme de Menthe into. I much prefer homepage whipped cream so I just took 1 1/2 Cups of Heavy Whipping Cream and whipped it with my stand mixer and added some sugar and about a tablespoon of Créme de Menthe. It was so good!
